Universal Studios Home Video have announced the HD DVD release of Jet Li’s Fearless for 19th December 2006 priced at $39.98 SRP. Inspired by the life of Huo Yuan Jia, a real Chinese martial arts master at the turn of the century, Jet Li takes the title role in his final martial arts epic with action sequences choreographed once again by the legendary Yuen Woo-Ping.
This day-and-date HD DVD / DVD Combo (HD30/DVD9) release features an Unrated (104mins) version of the film on the HD DVD side and both the Unrated (104mins) and US Theatrical (103mins) versions on the DVD side. Full specs are detailed below…

I also assumed Blu-Ray could take about 8 hours of HD on one layer, so why did 'House of Flying Daggers' claim to use up so much space when you could possibly get 4 versions on?

Where did you get that figure from, out of interest? I'd call that an extremely over-generous estimate.
Let's put it this way: 1920x1080 HD is six times the resolution of 720x480 SD. Therefore, using MPEG2, you will presumably need six times the disc space to get acceptable image quality (and that's before you factor in things like uncompressed PCM 5.1 audio). A dual-layer DVD holds 9 GB, about 8 of which is usable. A single-layer Blu-ray disc holds 25 GB, about 21-23 of which is usable. Therefore, using a code as bloated as MPEG2, you're going to struggle to get even two hours' worth of HD material on a single-layer disc with acceptable image quality.
